Here is our recipe for Polish mushroom and potatoes. It is an adapted version of a traditional recipe popular in our family for at least four generations. It’s a simple recipe but extremely tasty!
25 grams of dried mushrooms (Borowik / Steinpilzen / Boletus)
10 large potatoes, peeled
50 ml sunflower oil (olive oil if you prefer)
3 cloves of garlic, thinly sliced
A sprig or two of thyme
Soak the borowik mushrooms either overnight in cold water or for around 30 minutes in warm water.
Peel and thinly slice the potatoes. Old waxy potatoes rather than new work best for this recipe. Take the mushrooms out of the water and keep back for later.
Mix the potatoes with the mushrooms, oil, garlic and thyme. Season with salt and mix together.
Transfer everything to a shallow casserole dish or baking tray. Pour the mushroom liquid over the top and cover the dish loosely with foil or baking paper. Bake for one hour at 180c minutes. Serve and eat. We usually have this dish with paprika chicken Yum!
