Potato pancakes (placki ziemniaczane) were and are for many Polish families a regular feature of their diet. Some may not consider them particularly healthy and we have probably cut down on the number we now eat but we still generally have them at least once a week.
Here is our recipe for Polish potato pancakes.
1 kg potatoes
2 eggs, beaten
1 tbsp flour
Peel the potatoes and onion, and grate finely. Mix in the eggs and season with salt and pepper to taste. Add flour and stir until the mixture is stiff enough to hold its shape. Fry the potato mixture a bit at a time in oil or dripping. Flatten the potato into disc shapes. Cook until brown on both sides.
